The Madonia family's East Tropicana bakery since 1982: artisan loaves, kummelweck and dinner rolls, pastries, a retail store and wholesale for hotels.
On the night of March 20, 2007, fire destroyed Great Buns Bakery's building on East Tropicana Avenue. The Madonia family chose to rebuild on the same lot, and 17 months later the bakery reopened in a new building. Today that 25,000-square-foot plant, a few blocks east of the Strip and about 15 minutes from the airport, bakes for a large share of the city's hotels and casinos and still keeps a retail store out front.
Four generations of bakers
The family traces its baking back to Italian roots and Buffalo, New York. Tony Madonia Sr. moved to Las Vegas in 1982 and joined his father, Augie, in a small shop on East Charleston Boulevard, selling fresh breads and rolls that were hard to find in town then. The bakery moved to East Tropicana in 1988. It is owned and run by Tony Sr., his wife Lynn and their son Tony Jr., with their niece Deborah Morelli as vice president of operations. Tony Jr. has recalled that when he started, Las Vegas baking was mostly buffet dinner rolls; specialty and artisan breads came later.
What to pick up at the counter
The shelves are stocked fresh each morning, and regulars mention a day-old section too. A sample of the range:
- Artisan loaves: sourdough boule, Toscano, cranberry walnut, Kalamata olive, white chocolate pecan and challah
- Rolls: Kaiser and kummelweck rolls, hamburger and hot dog buns, baguettinis and crusty rolls, plus a long list of dinner rolls
- Pastries: almond croissants, crumb cakes, bundt and pound cakes, Danish, sticky buns, elephant ears and black and white cookies
- Also: bagels, pretzels and seasonal items
Orders are taken by phone only. Call ahead with your items and a pickup time, and allow three to five days for holiday or special items. Walk-ins can shop the shelves anytime the store is open.
